Slow Food is an
international association, started in Italy in 1986 as an answer
to the invasion of fast food and the frenzy of modern-day lives.
Today the association has over 90,000 partners in 104 countries.
In each city the "Convivia" organizes events and demonstrations
of the gastronomical "Laboratorios del Gusto (Laboratories
of Taste)," which always offer an interesting and amusing time.
In Mexico, there are currently "Convivia"s in Mexico City
and Guadalajara.

What is Slow Food?
Slow Food is an international association,

organizes events and demonstrations of the gastronomical "Laboratorios
del Gusto (Laboratories of Taste)," which always offer an interesting
and amusing time. In Mexico, there are currently "Convivia"s
in Mexico City and Guadalajara.
Slow
Food raises the awarness of the artisans in the realm of flavors,
nutritional products, small argiculture, sustainable cattle ranching
and fish hatcheries. In sum the ecological gastronomical community
that is "ecogastronomía."
Slow Food also promotes the education of tastes of among children
and adults. Slow Food develops many activites to promote and make
reality its ideal. Among these projects are:
El Salón del Gusto de Turín
- Every two years this organization reunites producers of foods
and wines of many countries to present their latest produce or products.
Most recently in October of 2004, 150,000 people attened this event.
El Premio Slow Food por la defensa de la Biodiversidad -
This organization honors people or associations that safeguard the
finer things in life. Several Mexican were awarded this prize in
the past few years.
La Universidad de Ciencias Gastronómicas
- Only the best in the world are represented or sponsored by this
organization, which investigates the highest level of experts and
students in their respective fields and brings them together.
Los Baluartes
- This organization helps the aid to educate people about Slow Food
in more pratical forms and to try and save traditional vegetables,
animals and products. In Mexico, there are four such groups.
Terra Madre -
The most recent initiative of Slow Food (started in October 2004),
this is a world-wide encounter between 5000 producers to share experiences
and projects. One hundred Mexican producers have participated.

The products that we use in our restaurant
come from almost every zone of San Miguel de Allende. It is important
to give jobs to the local farmers and use the product of the zone,
because this guarantees the quality and freshness of the products.
When the vegetables travel thru thousands of miles, they lose
their organic quality, for this reason choose to work with the
ranchos of our zone.
